Recipe

Carwyn's Feijoa Cheesecake

200gms cream cheese
2 eggs
2 feijoa's
100 gms white chocolate
150 biscuit crumbs
100 gms butter
100 gms and 75 gms of sugar

Pre-heat oven to 180 degrees

*Melt butter in a bowl and add biscuit crumbs, mix together. Place mixture in 20cm round fan dish and place in fridge.

*Peel feijoa's and bring to boil in water with the 100gms of sugar. Boil until cooked appox 15-20mins. drain and puree feijoa's, set aside.

*Melt chocolate gently in a bowl, careful not to burn. set aside.

*In a magi-mix (If you don't have a magi-mix and big bowl and whisk will do), add the cream cheese and the 75 gms of sugar mix. Then add eggs one at a time. Then add feijoa's and white chocolate.

*Pour over the biscuit mixture and then bake at 180 until mixture is set (appox 1 hour).
